Heather Mead

Yields 3 gallons
Ingredients:
5 lbs Clover Honey
3.5 lbs Wildflower Honey
1 lb Whole Dried Heather Flowers
1 tsp bee pollen
Juice of 1 lemon
Sweet Mead Yeast


 
Instructions:
Bring 3 gallons of water to a boil. Add 11 oz heather flowers and the bee pollen and boil for 20 minutes, then turn off heat. Add the remaining 5 oz heather tops, all the honey and the lemon juice, stirring constantly. Once all the ingredients are thoroughly dissolved, cool the must to approx. 75°F and strain into a 5 gallon fermenter. Aerate well and pitch the yeast. Ferment at 70 to 75 degrees until finished, rousing the yeast if necessary.

F.G. = approximately 1.015
ABV = around 10%
